Muffins are my favorite thing to bake! mostly, because I love eating muffins. They’re so versatile- you eat it for breakfast, a snack , good to grab and go, add it to your yogurt bowl- I mean the possibilities are endless.
These muffins are one of my faves!
1- they have added nutrients and veggies in them from the zucchini (which you don’t taste)

I used bobsredmill paleo baking flour for these. And what I love about this flour is that its the perfect sub for regular wheat flour. its a combo of different flours, which is why I love the texture. I find the key to baking good healthier treats is by combining different flours to get that texture that mimics regular wheat flour. You can find it here
