Guys! I am so obsessed with these linzer tarts! how cute are they? I feel like this is the type of cookie that no one even attempts to make healthy. Because, lets be honest the buttery flakey cookie with the sugary jam- how do you even compete?! I always try and make my favorite treats healthier, but if I feel like it doesn’t come close I would never share it- because than whats the point? plus its not satisfying at all if it doesn’t taste like the real deal.
I love Mac and cheese, and im sure you guys see the butternut squash Mac and cheese version on instagram. If not, its supposed to be a copycat Mac and cheese made out of pureed butternut squash and some other ingredients. I saw this recipe online and ran to make it! I was so excited for dinner that night and ended up being so disappointed. Didn’t even come close to Mac and cheese and I ended up throwing the whole thing away. Anyway, my point is that I love to share healthy recipes that actually taste like the unhealthy version. And these linzer tarts do.
these cookies are made with almond flour and arrowroot starch and 4 other ingredients! So many people ask me what arrowroot starch is so ill explain a little bit. Arrowroot starch is gluten free, grain free and paleo friendly. It comes from a tropical plant. Its almost like a healthier alternative to corn starch, but it is made without any harsh chemicals. Arrowroot starch is very versatile ,Whenever I want to make my cookies crispier I use arrowroot starch. You can also use it as a sauce thickener. It definitely should be a staple in your pantry!
These cookies are definitely a little tedious! with the roll out, cut out. But definitely worth it if you have the time to make them! plus the dough is easy to work with so thats a plus. hope you enjoy!
