So, I was never a lemon person. I hate lemon ices, I only put olive oil on my salad, and I never even flinched by the dessert lemon meringue pie. Just not my thing. But, when there’s a hint of lemon in pound cake, well thats a whole different ball game.
I was scrolling though my instagram feed and I saw a recipe for this lemon blueberry pound cake, But not a healthy one. It was filled with sugar and obviously a pound of butter but for some reason it sounded so good to me. I couldn’t stop thinking about it (lol I think about food a lot) so I decided to make a healthy version and it did not disappoint.
What’s awesome about this recipe is that its not too lemony. You just get a hint of it plus the blueberries- YUM. I used white spelt flour for this recipe, but you can totally use a different one. I usually make my recipes gluten free, so if you want this to be gluten free you can also try it with oat flour.
