Best week night dinner growing up was once a month when my mom had her card game, HANDS DOWN. Eggplant parmesan, pasta, pizza, salads, just to name a few. But out of all those items my favorite was this garlicky mushroom and peas pasta. So simple but so good! I always went for seconds… and thirds, and then brought the rest for school lunch.
To me pasta is good any which way. There’s so much you can do with it and its never something that I would take out of my diet. Well, there’s a whole list of foods I wouldn’t take out of my diet but pasta is number one. There are so many healthier alternatives to pasta that theres no excuse not to have it! rice pasta, chickpea pasta, lentil pasta, etc. You just have to find the one.
