Im not a vegan, but tons of my dinners are plant based vegan. My husband can’t eat dairy, and I don’t eat much of it because I feel better off of it. If a few years ago you told me I would be eating tofu I would think you’re crazy. I never actually enjoyed eating tofu up until about a year ago. But I realized that tofu taste like whatever you want it to taste like! once you learn how to cook it the right way, there is so much you can do with it!
I made these tofu tacos because I got sick of fish tacos every week, plus anything in a taco form is automatically good. And its also one of the easiest meals to make! its my go to when i’m not in the mood to cook anything complicated. Topped with roasted corn and avocado you seriously can’t go wrong.
I know the reason why most people dislike tofu is because of its spongy texture. So, the key to these is to get them crispy by cooking them in high temperature for awhile. Plus the breading already gives them a crunch.
These tofu tacos are so enjoyable because they’re a light meal. It makes the perfect lunch or dinner. Definitely worth a shot!
