Corn muffins guys. Corn. Muffins. Healthy corn muffins. I mean, what the heck is better? It been on my mind for awhile to create a healthier corn muffin. I felt that you really can’t beat the original buttery one (specifically Entenmanns) so I was very skeptical. But, I finally took the plunge and went for it! because i’m all about taking risks these days (part of my New Years resolution was to just DO IT).
can I just tell you how freaken good these are? since I have a few muffins on my blog that are sweet, I wanted to create a more savory type of muffin. Even though the packaged ones or the ones you buy from Dunkin Donuts are full of sugar! I didn’t put that much in these on purpose. They make the best breakfast! toasted with the perfect flakiness.
I love creating foods that bring me back to what I used to enjoy eating as a kid! there’s such a comfort to it and there’s no reason why we shouldn’t enjoy the foods we love! These corn muffins remind me of my elementary school days. My dad used to prepare us the Entenmanns corn muffins for breakfast every morning, toasted to perfection with melted butter.
