You guys! this is my first blog post! I’m so excited but also so nervous. Took me forever to actually do this. I kept waiting for the perfect time to begin, but then I realized that the time kept passing and I was doing nothing about my passion! I guess thats the thing about life right? something will always come up and change will always happen. We need to stop waiting and DO. And of course a ton of self doubt comes in- like i’m not good enough for this blog, people may hate what I write and my recipes might suck. But I’m going to put that all aside now and just be my true self on here. If this blog can help and inspire even one person, I will be complete.
Ok, now onto these coffee cake muffins! these are my favorite ever. They are also my moms favorite, she’s been begging me to make her a batch. When I bake, I try really hard to come close to the real thing. And these remind me of those Entenmanns coffee cake that come two in a pack. I used to eat those like crazy! always my go to snack in elementary school. That and devil dogs- anyone?? btw I thought I was so healthy when I ate the “reduced fat” version of those.
This recipe is refined sugar free, and gluten free. Made with oat flour and brown rice flour. You can always sub the brown rice flour for spelt flour if you’d like and don’t care about gluten free. I actually switch off with whatever I have on hand. They make the perfect breakfast or midday snack with your cup of tea. I hate tea by the way, like I seriously try so hard to like it and drink it but I gag.
Best of all, these muffins are guilt free and you’re going to love them!!
