I was never the biggest fan of carrot cake. UNTIL NOW. I don’t know, I had carrots sitting in my fridge and I needed to bake something while my baby was napping. Trying to avoid sitting too much during my day. But then I bake. And eat it. So which one is worse?? not that eating is bad, but you know what I mean.
Anyway, this carrot cake is the moistest loaf I’ve ever made. I actually think I forgot to squeeze out some of the water in the carrots, but it definitely made it better! This is what my breakfasts consist of. These loafs! with some nut butter spread and a cup of coffee.
Btw, if you ever want to make any loaf into muffins instead you can. Or you can freeze half and leave the other half in the fridge! which is what I do, so that I don’t stuff my face with a whole loaf.
