Its really crazy! I try so hard to plan out my day but never seems to work. I committed to writing two blog posts today and you’re lucky I got one! But maybe all the things that get in the way are really excuses. I am the biggest procrastinator, I sometimes have the same to do list for a month! my husband kills me because he is the total opposite, he does things that second! if only….
I’ve had so many mixed feelings and fears about this blog. It requires a lot of work plus I need to be vulnerable on here and open to you guys- thats scary as heck! but health is my passion. I want you guys to have a place to go where you can not only find healthy recipes but read about my experiences with wellness and how this lifestyle changes the way I feel on a daily basis.
that being said, while my baby yaps away in his crib I will share with you these yummy blueberry muffins! I never loved fruit in my muffins or any dessert really, but these are AMAZING. I used a combination of oat flour and almond flour for these and the texture came out great.
It’s always good to have these types of treats stocked in your freezer. We don’t always have time for avocado toast and a poached egg with yolk oozing out. And these muffins are good for any time of day. Running out in the morning? grab a muffin. Making sure all your kids are ready and dressed for school and have no time for breakfast? grab a muffin. Hungry at 3pm? grab a muffin. After dinner treat? grab and freaken muffin. You get the point…
